Every drop of spirit is distilled, matured and bottled on the island using water from our well, Tobar na Ba Bàine, ‘Well of the Pale Cow’. Maximising the influence of the island in our spirit.
Mineral-rich Raasay water and long fermentations of up to 5 days develop sweet blackberry characteristics in the spirit before it even touches the oak of the cask.
Two Isle of Raasay spirits – peated and unpeated – are matured separately in first fill Rye whiskey, fresh Chinkapin oak and first fill Bordeaux red wine casks. Each of the three casks used are peated and unpeated.
As a small-batch, handcrafted distiller there will always be slight variation between each batch depending on the composition of that particular bottling.
Six recipe casks marry together to create a perfect cask strength dram with real elegance, complexity and depth of character.
