The Inaugural Release from the Kilchoman Distillery. The very first release from Kilchoman, aged for 3 years in fresh Bourbon Barrels from Buffalo Trace Distillery in Kentucky, USA and then finished in Oloroso Sherry Butts for 5 months.
Kilchoman is a family run business established by Anthony and Kathy Wills in 2005. As the business expanded, the husband and wife team were then joined by their three sons, James, George and Peter. The Wills family remain the driving force behind Kilchoman with Anthony as Managing Director and Master Distiller, Kathy running the Visitor Centre and their three sons managing the distillery’s sales and marketing activities.
The farm has a variety of landscapes covering an area of 2,300 acres, surrounding the ruined Kilchoman Church. The craggy hill ground to the south is grazed by their flock of blackface sheep. To the west, their herd of Aberdeen Angus cattle feed on a combination of machair grasses and draff, barley husks discarded during the whisky-making process.
The farm philosophy stems from Anthony and Kathy’s desire to resurrect the grass roots tradition of farm distilling. Producing the grain, distilling the spirit, maturing the casks and then bottling all at the Kilchoman Farm Distillery.
From the very beginning the plan was a 100% Islay range of Single Malt. A revival of Single Malt whisky being cultivated from barley to bottle in a single location.
Non Chill Filtered and Natural Colour.
Colour: Rich, medium straw.
Nose: Wood smoke and medicinal flavours. Rich dark fruits then light citrus lemon and orange.
Palate: Remarkably viscous, peat smoke with dark fruits, sultanas and creamy toffee.
Finish: A long finish of peat smoke leaving a clean lingering aftertaste.
