The earliest Aqua Vitae was made at Lindores as long ago as 1494 and they have authentically recreated that recipe and reimagined it as a inquisitively versatile spirit.
Aqua Vitae is made at Lindores Abbey using spices, dried fruit and locally grown green herbs such as Douglas fir and sweet cicely. With citrus notes and full of sweet and spiced flavours this can be used as a mixed drink or a cocktail base.
Today the Aqua Vitae is distilled in pot stills and then infused with a blend of spices and herbs, including cleavers and sweet cicely which grows in the grounds of the ancient Abbey. Its entirely natural with no added sugars.
Tasting Notes: Initail light top notes of peach and pear, this gives way to hints of ginger, clove and cinnamon spice. A rich caramel sweetness with light herbal notes to the finish.
Try pouring 50ml of Aqua Vitae over ice in a highball glass, topped with ginger ale and garnish with a tist of orange.

We visited Lindores in Summer of 2019 before they released their whisky and this was their primary product available for sale (they also sold barrels that were still maturing). We fell in love with this. It's sweet with a delicate herbal profile and isn't really like much we've had before.
