This is the First in a series of Annual Releases from Lindores Abbey Distillery using French Virgin Oak Casks to celebrate their centuries-old ties between the Abbey and the French village of Thiron-Gardais.
This single malt embodies the legacy of the Tironensian monks who laid down the spiritual foundations of Scotch Whisky. Lindores Abbey was founded by the monks from Thiron in 1191.
Matured from First-Fill Bourbon casks and STR Red Wine Barriques combined with the French Virgin Oak.
Non-Chill Filtered and Natural Colour bottled at the Distillery.
Lindores Abbey Distillery currently use the Laureate strain of barley grown on local farms whose fields surround the distillery and these would have originally been Abbey lands. They have three copper pot stills, one large wash still and two smaller spirit stills, which allows a greater copper contact in the final distillation, to create a clean and delicate flavour within the spirit.
Fermentation in traditional wooden washbacks, supplied by Joseph Brown of Dufftown.
The water for their whisky comes from a borehole near the distillery, which they believe is the same water supply used in 1494. The Abbey was fed by several wells such as the Abbots well, the Monks well, the Bluidy well and the Witches well.
In this age of sustainability and with the aim to cut their carbon footprint, their supply chain has become ever more local and this allows them to support local businesses.
Nose: Aromas of mellow vanilla cake, caramel syrup, baking spices and fruity plum jam.
Palate: Oaky vanilla and butterscotch with undertones of plum jam, cinnamon and ginger with layers of roasted chestnuts.
Finish: Finely balanced and complex with a smooth and silky texture.
