Balvenie 12 Year Old 'DoubleWood' Previous edition Speyside Single Malt Scotch Whisky 40% 70cl

This Balvenie 12 year old DoubleWood is the previous edition in a differnt tube emphasising The Maltman's Shiel used by their four maltmen who turn the grain in their malt barn. The bottle shows seperate sections for First Cask and Second Cask. 

The Balvenie Distillery has been owned and managed by the same independent family company for five generations. 

In 1982 the Balvenie Malt Master David C. Stewart pioneered the now standard 'wood finishing technique'. The idea that Spirit can be transfered from one cask to another. This was introduced into the Balvenie Classic Single Malt.

Then in 1993 the Balvenie 12 year old DoubleWood Single Malt replaced the Balvenie Classic and showed the emphasis of DoubleWood.

First using Whisky Oak, the ex-bourbon casks for many years of maturation to impart gentle warming layers of vanilla spiciness and then transfering the spirit into European Sherry Oak for a few months to increase complexity and add fruit and honeyed depths. Then the whisky is transferred to large oak vessels called 'tuns' for three to four months to allow the whisky from the individual casks to marry

The Balvenie DoubleWood acquires its complex yet rich and smooth taste from its maturation in two different types of oak casks. 

The first cask is the Whisky Oak Cask where many years of maturation in traditional whisky casks mellows the maturing spirit and imparts warming layers of vanilla spiciness. 

The second cask is the Sherry Oak Cask where further maturation in European oak Sherry casks increases the complexity to bring fruity honeyed depths to the resulting Single Malt. 

The traditional casks soften and add delicate character, the sherry wood brings depth and fullness of flavour and the final few months in our tuns allow the whiskies to marry harmoniously.

NOSE: Sweet fruit and Oloroso sherry notes, layered with honey and vanilla.

TASTE: Smooth and mellow with beautifully combined flavours ~ nutty sweetness, cinnamon spiciness and a delicately proportioned layer of sherry.

FINISH: Long and Warming.
