The Story of the Cask:
Few distilleries match the quiet consistency and enduring quality of the Caol Ila Distillery. Long admired for it's clarity of spirit and precision of peat, Caol Ila has always been one of Finn Thomson's personal favourites.
This 15 year old expression was finished for almost two years in an Amorone cask, to bring intrigue and harmony. Amorone is a celebrated red wine from Italy's Valpolicella region. Made from partially dried grapes, concentrating sugars, flavour and texture before fermentation. The result is a wine of depth and richness, dark cherry, dried fruit, gentle spice and a subtle bittersweet edge.
Those characteristics marry beautifully with this peated scotch. The natural sweetness and dried fruit intensity of the Amorone cask softens the maritime smoke, while its structure enhances the Caol Ila's citrus brightness and coastal salinity.
Rather than masking the peat, the wine cask amplifies it, creating a layered interplay between smoke, fruit and the savory depth. The result is a distinctive yet balanced meeting of Islay precision and italian richness, shaped by time and careful maturation.
Finn Thomson grew up being inspired by his Granddad, Michael who spent the 1980s and 1990s selecting and collecting the young casks of single malts and grains that had formed the secret recipe of the Beneagles blend, handed down over the generations. In doing so, he accumulated one of Scotland’s largest private cask collections.
