Glenallachie is an independent distillery where production is slowed to better influence quality and find the finest high-quality casks for maturation.
They have the capacity to produce four million litres of alcohol per year but chose to reduce this to one million litres to focus on a quality spirit. By slowing down this process they have increased their fermentation period to 160 hours.

Made from the Bordeaux region's white grape, Sauternes is a celebrated French dessert wine made sweet by the 'noble rot', which dehydrates the grapes and concentrates the sugars. The specially selected hogshead casks have added notes of ripe peach, caramel sauce and stem ginger on the honey forward spirit.

Tasting notes:
Nose: Honeycomb, butterscotch and toffee sauce, with crystalised ginger, mocha and peaches.
Palate: Tropical fruits, heather honey and baking spices, followed by demerara sugar, coconut and marmalade, with citrus notes, caramel and ice cream on the finish.
