Glenallachie is an independent distillery where production is slowed to better influence quality and find the finest high-quality casks for maturation.
They have the capacity to produce four million litres of alcohol per year but chose to reduce this to one million litres to focus on a quality spirit. By slowing down this process they have increased their fermentation period to 160 hours.

The ‘Sherry Series’ expression has spent an initial period in American oak ex-Bourbon barrels before being transferred to expertly selected Sherry casks. Three bottles produced are the FINO, the AMONTILLADO and the OLOROSO sherry cask finish.
The Amontillado Cask Finish enjoyed secondary maturation in hogsheads that previously held a drier style of Sherry, which then undergoes biological and oxidative ageing to develop a richer colour and more robust characteristics. The subsequent spirit is said to “deliver notes of dark cherries, toasted hazelnuts and caramel sauce”.
Non Chill Filtered and Natural Colour this Amontillado Sherry Finish has been bottled at 48%
Tasting notes:
Nose: Soft orchard fruits, cinnamon and heather honey, with butterscotch, hazelnuts and dark tobacco.
Palate: Honeycomb, maraschino cherries and dried apricots, followed by poached pears, blood orange, mixed nuts and cinnamon.
