A single malt Scotch whisky from GlenAllachie's Wood Collection matured in well-seasoned oloroso butts. This has delivered bold layers of coffee beans, sticky raisins, and stem ginger that works in tandem with The GlenAllachie’s honey-rich house style, a contrast allowed to shine by bottling this whisky without chill-filtration or additional colouring at a substantial 48% ABV.
Nose: Heather honey, mocha, and dried apricots, with notes of cinnamon butter, red velvet cake, and marzipan.
Palate: Dark chocolate, honeycomb, and butterscotch, leading to dried red berries, ginger and damsons.
Finish: Poached apples and muscovado sugar.
Glenallachie is an independent distillery where production is slowed to better influence quality and find the finest high-quality casks for maturation.
They have the capacity to produce four million litres of alcohol per year but chose to reduce this to one million litres to focus on a quality spirit. By slowing down this process they have increased their fermentation period to 160 hours.

The ‘Sherry Series’ expression has spent an initial period in American oak ex-Bourbon barrels before being transferred to expertly selected Sherry casks.
Known for its pale appearance, Fino – the driest Sherry style – must be biologically aged for at least two years under a yeast layer that prevents oxidation. Maturation in former Fino hogsheads has delivered this Limited Edition Scotch whisky “overflowing with poached pears, vanilla custard and sugared almonds”.
The darkest dry Sherry style, this Oloroso is subjected to extensive oxidative ageing and is renowned for its pronounced nutty, dried fruit qualities. Using Oloroso butts to age their spirit has resulted in a single malt “bursting with dried cranberries, ginger biscuits, dark chocolate and almonds”.
