The 2010 Vintage Limited Edition has been matured in both ex-bourbon and ex-sherry casks for over 9 years creating a rich combination of peat smoke, dried fruit and herbaceous spices. Released at 48% to accentuate the powerful flavours and a long clean finish.
The 2010 Vintage is a vatting of 30 fresh bourbon barrels and 3 oloroso sherry butts filled in 2010 and matuted for over 9 years.
Kilchoman is a family run business established by Anthony and Kathy Wills in 2005. As the business expanded, the husband and wife team were then joined by their three sons, James, George and Peter. The Wills family remain the driving force behind Kilchoman with Anthony as Managing Director and Master Distiller, Kathy running the Visitor Centre and their three sons managing the distillery’s sales and marketing activities.
The farm has a variety of landscapes covering an area of 2,300 acres, surrounding the ruined Kilchoman Church. The craggy hill ground to the south is grazed by their flock of blackface sheep. To the west, their herd of Aberdeen Angus cattle feed on a combination of machair grasses and draff, barley husks discarded during the whisky-making process.
The farm philosophy stems from Anthony and Kathy’s desire to resurrect the grass roots tradition of farm distilling. Producing the grain, distilling the spirit, maturing the casks and then bottling all at the Kilchoman Farm Distillery.
From the very beginning the plan was a 100% Islay range of Single Malt. A revival of Single Malt whisky being cultivated from barley to bottle in a single location.
Non Chill Filtered, Natural Colour and bottled at 48%.
Nose: Bright notes of lemon zest, melted butter, sweet spices and damp smouldering peat smoke.
Palate: Dried seaweed, chimney smoke, cloves, sweet tobacco, banana and linseed oil.
Finish: Dried apricot, vanilla and rounded peat smoke.
