Lindores Abbey 'Nectere' Lowland Single Malt Scotch Whisky 47.2% 70cl

From Lindores Abbey Distillery the latest sherry release called the Nectere.

A quartet of exceptional sherry casks.

Matured in Oloroso, Pedro Ximenez, Amontillado and Palo Cortado casks each contributing layers of dark fruit, spice, nuttiness and depth that only the finest Sherry wood can give.

Non-Chill Filtered and Natural Colour bottled at the Distillery.

Lindores Abbey Distillery currently use the Laureate strain of barley grown on local farms whose fields surround the distillery and these would have originally been Abbey lands. They have three copper pot stills, one large wash still and two smaller spirit stills, which allows a greater copper contact in the final distillation, to create a clean and delicate flavour within the spirit.

Fermentation in traditional wooden washbacks, supplied by Joseph Brown of Dufftown.

The water for their whisky comes from a borehole near the distillery, which they believe is the same water supply used in 1494. The Abbey was fed by several wells such as the Abbots well, the Monks well, the Bluidy well and the Witches well.

In this age of sustainability and with the aim to cut their carbon footprint, their supply chain has become ever more local and this allows them to support local businesses.

Nose: Sweet treacle, red apples, vanilla custard cream and cinnamon.

Palate: Mellow molasses, chocolate raisins, nutty macaroons, toffee and baking spices unfold with a velvety and beautifully balanced complexity.

Finish: Long and creamy, with warm spice lingering at the back of the palate.
